Grace Koshu – Hishiyama Vineyards

VINTAGE 2019

Katsunuma is Japan’s top Koshu producing region situated at the eastern end of the Kofu Basin.
The Katsunuma area is an alluvial fan with widely distributed well-drained soil, and has been suitable for viticulture since ancient times. The characteristic intricate terrain and complex soils give rise to vines that show the distinguishing sense of place.
The Hishiyama district, with its complex terrain, is situated at the highest altitude (500m to 600m) of Katsunuma. Its soil is diverse, with large granite scattered throughout the area. The lively acidity and smoky minerality in the wines from this region are direct expressions of the sense of place.
Since our predecessor’s era, we have been amazed by the concentration in the grapes from this area. We put on a shade (umbrella) for each bunch of grapes, and after harvesting by hand, grapes from specific vineyards are selected, followed by fermentation and maturation in stainless steel tanks.

2019 Vintage
The growing season was light in rain with plenty of sunshine, smoothly promoting growth. July was rainy and cloudy, and maturity slowed down, but thanks to the good weather at the end of August, the delay in the summer was made up for. There was little damage from the autumn typhoon, and we were able to wait for full maturity before harvesting.

Tasting Note

Limpid, in good condition. Bright, light yellow with a green tinge. On the nose, citrus aromas of lemon and lime , floral aromas of acacia, spicy aromas of coriander and cumin, and mineralic aroma evoking minerals. Smooth attack and bone dry. On the palate, citrus fruit flavours of lemon and lime, minerality evoking minerals, relaxed, but with ample acidity as backbone.

Foor pairing

Red Snapper Carpaccio
Koshu wines go well with white fish. Among them, the Hishiyama Vineyards Koshu in particular, has complex acidity, and accords well with vinegar based sauces. Among fruits, the citrus Sudachi matches best. If you squeeze Sudachi on your carpaccio, you will like it even more.

Spring Soba with Japanese Parsely and Clam
Pair soba noodles with ingredients that marry well with Koshu, such as Kelp stock, clams, Japanese parsley, yuzu …. Please also try putting in Koshu wine when making the soup stock.
Although “Grace Koshu Hishiyama Vineyards” is made using a very natural winemaking process that does not use oak barrels during fermentation and maturation, when paired with food, you will be amazed at its depth.
